Home-made Golgappa

GOLGAPPA IS NOT JUST A NAME, ITS AN EMOTION!

There is no comparison of that street side golgappa but in this quarantine period we need to satisfy our golgappa cravings. 


So here, I am presenting Homemade Golgappa recipe.

Ingredients:

For preparing golgappa

Suji
Maida
Salt

For preparing Tikha pani

Green chillies
Salt 
Pink salt
Curshed Mint leaves
Lemon juice

For preparing filling

Smashed raw banana / potatoes
Boiled blak chana
Salt
Chat masala
Chilli mint paste

Preparing Golgappa

Step 1:


  • Take a mixing bowl and add 1 cup suji. 
  • Add salt as per taste.
  • Mix it gently with water. Add small amount of water at a time.. Make a dough little soft as suji absorbs water. 
  • Give it a rest of 10 minutes.


Step 2:


  • Make small balls from the dough.
  • If you have roti maker/khakhra maker, turn it on. After 20 seconds turn it off. Then put 1 ball and press it gently.. 

  • If you don't have roti maker, make thin rounds from the dough.

Step 3:


  • Heat a pan full of oil and fry prepared golgappas on low flame.
  • Do not fry it on high flame otherwise it will not cook properly. 
  • Cook it until it get the golden brown colour.
  • (As we have not used maida, it will take some time to get cooked, if you're in hurry, you can add 1 tbsp of maida while making a dough.)

Preparing Teekha Pani

Step 1: 


  • Add crushed green chilles, crushed mint leaves into water. You can add coriander paste too if you like.
  • Add salt, pink salt and lemon juice into it..
  • Mix them all well and let it get cool.

Step 2:


  • Strain water with the strainer and top it with some mint and mamri.


Preparing filling


  • Take a mixing bowl and add boiled smashed raw banana/potatoes and boiled black chana.
  • Add Salt, Chat masala, Chilli mint paste into it and mix altogether.



Our gol gappa is ready to serve!
