Pink sauce pasta (Jain)

Pink sauce pasta is totally an Indian version of Italian pasta.

Here I am going to prepare pink sauce without using onion and garlic. I know many people who ask question that how jain people survive without these ingredients, but they do.. and even though they do not use these ingredients their food tastes delecious!
Anyway, there are two ways of preparing pink sauce pasta. In one method, we mix cream in our red pasta. And in another method, we add White sauce in our red pasta.
Here, I am going to prepare red and white sauce and after mixing both of them and we will mix pasta into the pink grevy.

Ingredients:

200 gm Pasta
Tomato puree (3-4 medium tomatoes)
Ketchup 2-3 tbsp
1 medium sized Capsicum
Chili flakes, Oregano
Maida 1 tbsp
1 cup Milk
Black paper
Salt

Preparing pasta

  • Add water to the pan and add some salt into it.
  • Add pasta into it. Add 1 tbsp oil into it and cook it for 10 minutes on medium flame.
  • Take pasta out and let it get cool.
Preparing red sauce

  • Take 2 tbsp oil into pan, add capsicum into it and saute it gently.
  • Then add salt and mix it well. After cooking it for 5 mins, add tomato puree into it, mix them all well.
  • Add tomato ketchup into it and mix it well. Let the grevy cook for 10 minutes.
Preparing white sauce

  • Take 2 tbsp ghee/butter into pan.
  • Add 1 tbsp maida into it and mix it well. Let it cook it for 1 minute.
  • Add milk into it and mix it well.
  • Add black papper, chilli flakes and oragano into it and mix it well. Stir it continuously otherwise it will start sticking to the bottom. Cook it for 5 minutes.

  • Now, mix both the prepared sauces and mix them well. Let it cook for 2 minutes.
  • Add pasta into it, and mix it well. Let it cook for 5 minutes.

Our pink sauce pasta is ready to serve.
Put it in a serving bowl and garnish it with pinch of chilli flakes and oragano and you can use corn and olives too.
